Yams are loaded with good things, most notably Vitamin A, but many other nutrients. They are most healthy steamed and then eaten with minimal other additions. Well, I have found recipe for yams that even my kids will eat. And unfortunately it's because so much sugar is added in. Forgive me.
4 or 5 medium yams
1 cup pineapple juice
1 cup orange juice
1/4 cup butter
1 egg, slightly beaten
1 tsp salt
1/4 tsp cinnamon
1/3 cup cream
3 tbsp brown sugar
Topping:
1/4 cup flour
3 tbsp brown sugar
1/2 tsp cinnamon
1/4 tsp salt
3 tbsp butter
1/4 cup chopped nuts
1 cup mini marshmallows
Peel yams and cut into large chunks. Place in saucepan; add furit juices. Cook about 20 minutes, or until tneder. Mash yams well. Add butter, eggs, salt, cinnamon, brown sugar and cream or juice if needed. Spoon into well greased baking dish.
Topping: Combine flour, brown sugar, cinnamon and salt. Cut butter into mixture until it resembles coarse crumbs. Stir in nuts; sprinkle mixture over yams. Press marshmallows lightly into top. Bake at 350 degrees for 25 minutes.
Six servings.
